Ingredients:
A batch of yellow cupcakes made according to the recipe
Some sesame seeds (optional)
A 9 X 13 pan of brownies made according to the recipe.
A batch of Marshmallow Fondant and divide into two, one dyed lettuce green, the other died American Cheese orange (recipe below)
Some of your favorite frosting
Food Coloring
Cut the yellow cupcakes horizontally – these will be your bun
Using a small circle cookie cutter cut your brownie pan into “hamburger patties”
Roll the fondant out, using powdered sugar or butter to keep the fondant from sticking to your rolling pins. Cut the yellow fondant into cheese squares, cut the green fondant into lettuce
Divide your frosting into two bowls, color one bowl of frosting ketchup red, the other mustard yellow (it works best if you go easy on the food coloring and make a lighter version of the real color).
Assemble your hamburgers by putting the bottom cupcake on the plate, adding the brownie circle, then the “lettuce,” “cheese,” and a little “ketchup” and “mustard.” Top with the yellow cupcake.
If desired lightly brush the top of each “hamburger” with water and sprinkle sesame seeds on top.
Marshmallow Fondant
8 oz mini marshmallows (or 27 normal size marshmallows)
4 cups of powdered sugar (you may need up to 1/2 cup more)
2 Tbs water
1/2 tsp vanilla
In a LARGE microwave safe bowl, heat the marshmallows until puffy. Add water, vanilla, and 2 cups of powdered sugar. Mix well.
Continue to add powdered sugar, one cup at a time, until fully incorporated. As the fondant forms, you will need to knead it by hand, instead of with a spoon. I spray my hands with a non-stick cooking spray to prevent the fondant from sticking.
