Eggplant Parmesan Burger

Just in time for grilling season, a DELICIOUS burger. I’m not exaggerating when I say it’s the most juicy, most flavorful burger I’ve ever eaten.
The trick is to know when to flip the burger. As protein strands are heated, they release moisture into the burger. Eventually, this burger makes it’s way to the top side of the patty. This moisture is the visual cue to flip the burger. Further, the bread crumbs sop up quite a bit of the burger juice, creating an amazingly juicy burger.


1 lb 85% lean -15% fat ground chuck
1/2 cup bread crumbs
1 egg
1 Tbs fresh rosemary – finely chopped
1 Tbs fresh oregano – finely chopped
2 ciabatta loaves
1 medium size eggplant
1 small bag of sun roasted tomatoes
1 5 oz container of freshly grated Parmesan cheese blend.
Garlic Powder

Combine chuck, bread crumbs, egg, rosemary, and oregano, stir to combine
Peel eggplant, and cut into enough 1/4″ thick slices to cover 4 burgers
Sprinkle eggplant slices with salt, then cook a single layer in microwave until tender – about 3 minutes.
Divide ground chuck mixture into 4 portions, make into patties
Cut ciabatta loaves into “burger size” buns, cut a horizontal slice, and brush olive oil on the interior of the bun
Cook patties on grill, liberally applying salt and garlic powder, turning when “burger juice” starts to form on top of each burger
Put eggplant slices on grill
3 minutes after putting eggplant on grill, put enough eggplant on each burger to cover the patty
Gently place sun roasted tomatoes on top of eggplant
Liberally sprinkle with cheese
Add buns, oiled side down to the grill and cook until toasted.
Cover the grill, and continue to cook until the patties are cooked all the way through, and the cheese is melted.
Pull the bun off the grill, add the patty and savor every bite.
For an added bunch, try adding fresh whole basil leaves.

    Oh, man, oh, man! This sounds good!!! I used some of your fresh Rosemary in Sunday’s roast beef. EVERYBODY gobbled it up and said how wonderful it was!
