Savory Mac and Cheese

Here’s the recipe we used today on Good Things Utah to illustrate the importance of anchovy paste to make things savory:

3 Tbs butter
3 Tbs all purpose flour
2 cups milk
8 oz cream cheese
1 Tsp Salt
1 Tsp Black Pepper
1 cup Italian blend cheese
1 cup Monterrey Jack
1/2 cup EXTRA sharp Cheddar
2 Tbs Anchovy Paste
1 Tsp Dill
1 Tsp smoked paprika
1/2 tsp ground mustard
8 oz cooked elbow macaroni.

1 cup Panko Bread Crumbs
3 Tbs melted butter
1/2 tsp salt

Combine butter and flour over heat, stir well until mixture starts to bubble.
Add milk, salt and black pepper and WHISK WHISK WHISK until combined.
Let cook until it starts to boil, stirring occasionally.
Remove from heat and add all the cheese, dill, anchovy paste, smoked paprika and elbow macaroni.
Pour into a 9 X 13 baking vessel.

Combine melted butter, panko bread crumbs and salt and mix well.
Liberally sprinkle bread crumb mixture over the top of the macaroni.
Bake at 400 for 20 minutes, or until bubbly.
